A troy ounce (31.1035g) is heavier than the everyday avoirdupois ounce (28.35g) used for food or postage — bullion, coins and the interbank spot price are always quoted in troy ounces, a convention dating back to medieval bullion trading. If you're pricing a bar or an American Gold Eagle/Buffalo coin rather than jewelry, this is the unit dealers and price charts will quote.
